Chipotle, Jersey Mike’s en route to the Cumberland County Mall

A duo of fast-casual restaurants joins the Shoppes at Cedar Cliff in Lower Allen Township.

Chipotle Mexican Grill and Jersey Mike’s Subs are being developed at 1120 Carlisle Road in a former First National Bank. No opening date has been announced, but judging by construction progress, both should be up and running in the coming weeks.

Both chains operate multiple locations in the area and focus on takeout.

According to Lower Allen Township planning commission minutes, Cedar Cliff Properties proposed to construct a 600 square foot addition to the rear of the building with room for a pick-up lane.

A Chipotle spokeswoman said the restaurant will open this fall with a digital “Chipotlane” drive-thru pickup lane as well as a dining area and frontline.

The the channel is hiring for the new restaurant and offering tuition assistance, free food, and medical/dental/vision insurance, among other benefits.

Chipotle operates more than 2,750 restaurants in the United States and internationally in Canada, the United Kingdom, France and Germany.

Jersey Mike’s is known for slicing meats and cheeses when customers place their orders. The sandwiches are served on bread baked on site. Order Mike’s Way for the onions, lettuce, tomato, spices, and “juice,” a mixture of olive oil and red wine vinegar.

The chain dates back to 1956 when Peter Cancro opened a sub-boutique in Point Pleasant, New Jersey, on the Jersey Shore. It now has around 2,000 restaurants open and under development nationwide.
